Pepper Chicken Quesadillas
Ingredients
2 c diced, cooked chicken
2 c (8 ounces) shredded cheddar cheese
1 can (4 ounces) sliced mushrooms, drained
1/4 c diced peppers**
8 flour tortillas, burrito size
1/4 c oil, divided
Directions
In small bowl, combine chicken, cheese, mushrooms and peppers. Evenly divide mixture among four flour tortillas and top each with remaining tortillas. Heat one tablespoon of oil in 10-inch skillet over medium heat. Add 1 quesadilla. Cook two minutes, turn and cook two minutes more until lightly browned and cheese is melted. Repeat with remaining oil and quesadillas. Cut into wedges and serve with your favorite toppings. Suggested toppings include salsa, sour cream or guacomole.
