Mexican recipes: Polvorones de Tequila
(Tequila Sugar Cookies)

Cookies:

5 cups flour
1 1/4 cups sugar
3/4 cup tequila
1 tbsp. ground cinnamon (freshly ground, if possible)
1 1/2 tsp. baking powder
2 1/4 cups shortening

Sugar topping:

1 cup sugar
1 tbsp. ground cinnamon (freshly ground, if possible)

Directions

Preheat oven to 350° F.

Combine cookie ingredients in large mixing bowl.

Knead dough together with hands.

When the dough is well combined, allow to rest for 15 minutes.

Combine sugar and cinnamon for topping in a shallow dish.

On a floured surface, roll cookie dough out in a ¼ inch thickness.

Cut into 2 inch circles, with a cookie cutter or a small glass.

Arrange on an ungreased cookie sheet, and bake for 12-15 minutes, until pale golden in color, and firm to the touch.

Roll in sugar topping while hot.

Makes 12 dozen
